How much and how often to water a vegetable garden

Consistent soil moisture matters more to most vegetables than any fixed schedule. A plant that goes from bone-dry to soaked and back again grows worse fruit than one kept evenly moist, even with less total water.

What "an inch a week" means

An inch of water over a bed is about 0.62 gallons per square foot. To check a sprinkler or can, set a few straight-sided containers in the watering area and time how long it takes to collect an inch.

That figure is a warm-weather average for an unmulched bed. Sandy soil, full sun, wind, and container growing all push actual need higher; mulch, clay soil and cool weather push it lower.

Water deeply, not often

A deep, infrequent soak wets the whole root zone and encourages roots to grow down after it. Light daily sprinkling only wets the top inch, training roots to stay shallow and making the plant more vulnerable the moment you miss a day.

For most beds, two to three deep waterings a week beats a sprinkle every day. Check by digging a finger or trowel down two or three inches — water when that depth is dry, not on a fixed clock.

Morning beats evening

Morning watering lets foliage dry off during the day, which cuts down on fungal disease. Evening watering leaves leaves wet overnight, exactly the conditions mildew and blight prefer.

Reading the plant

Wilting in the hottest part of a sunny afternoon that recovers by evening is normal — the plant is shedding water faster than roots can replace it, not necessarily thirsty. Wilting that has not recovered by morning means water now.

Overwatering shows differently: yellowing lower leaves, soft or swollen stems, and a soil surface that stays wet for days. Mulch and drip irrigation both make consistent watering much easier to hold.
